  • 1/3 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 3 tablespoons sugar

Preparation

  1. Preheat oven to 375ºF.
  2. Coat a spring form cheesecake pan with non-stick cooking spray.
  3. Whip together the cream cheese and yogurt until smooth.
  4. Slowly add the eggs, vanilla and sugar. The mixture should have a light yet smooth texture.
  5. Pour into prepared spring form pan. Place pan on a cookie sheet.
  6. Bake for 5 minutes then reduce the oven temperature to 230ºF and bake for another 45 minutes.
  7. Let cool in the oven with the door ajar, then refrigerate for 4 hours.
  8. Serve chilled and topped with your favorite seasonal berries.
