
Chilaquiles Rojos

Ingredients
- 2 Born Free Eggs
- 3oz. or 3 big handfuls of Corn Tortilla Chips
- ¾ cup enchilada sauce
- ½ avocado, sliced
- ¼ queso fresco
- 4 radishes, sliced thinly
- 3 tablespoons sour cream
- 2 tablespoons chopped cilantro
Directions
- Prep all ingredients and fry the Born Free eggs.
Note- Important to have all ingredients ready to go in order to work quickly. - In a large skillet, heat enchilada sauce until it starts to bubble, and turn the heat off.
- Add tortilla chips and gently stir until tortillas are completely coated.
- Remove the chips from the skillet onto the serving platter.
- Top with the Born Free fried eggs, sliced avocado, queso fresco, and radishes.
- Drizzle on the sour cream and sprinkle with cilantro.
- Best served promptly to avoid soggy chips and enjoy.
Note – These directions are for crispy chips. If you like softer chips allow for an extra moment or two in the skillet.
