Georgian Khachapuri (Cheese and Egg Bread)

  • 4 Born Free Eggs plus 1 for egg wash
  • 1 pound pizza dough, store-bought
  • 1 1/2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella
  • 1 1/2 cups feta cheese
  • 4 tablespoons everything bagel seasoning


1. Pre-heat oven to 350 degrees.

2. Take the dough from the refrigerator and allow it to rise on the countertop for 30 minutes or up to 3 hours.

3. In the meantime, in a bowl mix all cheeses together, and set aside.

4. Once the dough has risen, divide it in half.

5. On a lightly floured surface, roll out the first half into the shape of a long oval.

6. Pull and fold the dough’s sides and pinch ends together to form a boat.

7. Transfer onto a baking sheet lined with parchment paper.

8. Repeat with the second dough.

9. Fill with cheese mixture.

10. Beat 1 Born Free egg in a bowl. Using a pastry brush, coat all sides with egg wash.

11. Generously sprinkle edges with everything bagel seasoning.

12. Place in a preheated oven and bake for 15 minutes.

13. Remove from oven. With a spoon make 2 wells in each pastry.

14. One at a time, crack a Born Free egg into a small bowl and drop 2 eggs into each of the bread wells.

15. Return to oven and bake for about 5 minutes or until the desired doneness of the egg.

16. Remove from oven, plate, and serve immediately.
