Sunny Side up Eggs with Sweet Potato Hash Browns

Ingredients

  • 2 born free eggs
  • 3 slices turkey bacon
  • 1 large sweet potato
  • 1 clove garlic, crushed
  • salt and pepper to taste

Directions

  1. Wash 1 large sweet potato and cut into 1/2 inch cubes; cut bacon into small pieces.
  2. Add sweet potato, bacon and 1 crushed garlic clove to a pre-heated, medium-size skillet sprayed with olive oil cooking spray. Cook until potatoes are tender and bacon is cooked through, approximately 8-10 minutes.
  3. Half way through cooking the potatoes, making shallow wells and crack an egg into each.
  4. Cover and cook until the whites are set. Divide between 2 plates and sprinkle with salt and pepper to taste.
