Chilaquiles Rojos

Prep: 10 Minutes Cooking: 12 Minutes Serves: 2

Ingredients

  • 2 Born Free Eggs
  • 3oz. or 3 big handfuls of Corn Tortilla Chips
  • ¾ cup enchilada sauce
  • ½ avocado, sliced
  • ¼ queso fresco
  • 4 radishes, sliced thinly
  • 3 tablespoons sour cream
  • 2 tablespoons chopped cilantro

Directions

  1. Prep all ingredients and fry the Born Free eggs.
    Note- Important to have all ingredients ready to go in order to work quickly.
  2. In a large skillet, heat enchilada sauce until it starts to bubble, and turn the heat off.
  3. Add tortilla chips and gently stir until tortillas are completely coated.
  4. Remove the chips from the skillet onto the serving platter.
  5. Top with the Born Free fried eggs, sliced avocado, queso fresco, and radishes.
  6. Drizzle on the sour cream and sprinkle with cilantro.
  7. Best served promptly to avoid soggy chips and enjoy.

Note – These directions are for crispy chips. If you like softer chips allow for an extra moment or two in the skillet.
