Asparagus Pea Frittata

  • 3 tablespoons olive oil
  • 1 small yellow onion, chopped
  • 1 cup asparagus, trimmed and cut into pieces
  • 1 cup green peas
  • 6 eggs
  • ¼ cup heavy cream
  • ½ cup parmesan cheese, finely grated
  • sea salt and freshly cracked black pepper
  • 4 oz. goat cheese, crumbled


  1. Heat oil in an oven safe skillet over medium heat. Meanwhile, preheat oven to 400 degrees.
  2. Add the onions and sauté until translucent. Add the asparagus and peas and cook covered for approximately 3 to 4 minutes.
  3. In the meantime, whisk together the eggs, heavy cream, parmesan cheese and season with salt & pepper.
  4. Pour egg mixture into skillet and cook until edges start to set.
  5. Sprinkle the goat cheese on top, distributing evenly.
  6. Place the oven safe skillet in the oven for 15 to 20 minutes until the frittata is golden in color and eggs have set.
  7. Serve hot with your favorite salad or sides.
