Asparagus Pea Frittata

Ingredients
- 3 tablespoons olive oil
- 1 small yellow onion, chopped
- 1 cup asparagus, trimmed and cut into pieces
- 1 cup green peas
- 6 eggs
- ¼ cup heavy cream
- ½ cup parmesan cheese, finely grated
- sea salt and freshly cracked black pepper
- 4 oz. goat cheese, crumbled
Directions
- Heat oil in an oven safe skillet over medium heat. Meanwhile, preheat oven to 400 degrees.
- Add the onions and sauté until translucent. Add the asparagus and peas and cook covered for approximately 3 to 4 minutes.
- In the meantime, whisk together the eggs, heavy cream, parmesan cheese and season with salt & pepper.
- Pour egg mixture into skillet and cook until edges start to set.
- Sprinkle the goat cheese on top, distributing evenly.
- Place the oven safe skillet in the oven for 15 to 20 minutes until the frittata is golden in color and eggs have set.
- Serve hot with your favorite salad or sides.
