Breakfast Tacos

Prep: 10 Minutes Cooking: 5 Minutes Serves: 4-6

Ingredients

  • 1 medium tomato, chopped
  • 1 jalapeno, chopped
  • ¼ cup chopped red onion
  • 1 tablespoons lime juice
  • 1 tablespoon oil
  • 6 eggs, beaten
  • ¼ teaspoon salt
  • 6 flour street tacos
  • ½ cup cooked chorizo
  • 1 teaspoon chopped cilantro, if desired

Directions

  1. Heat a large skillet and oil over medium heat.
  2. Add the eggs and salt and scramble to a soft set.
  3. Fill tacos with scrambled eggs and chorizo and top with pico, and cilantro.

 

For pico:
In a small bowl, combine tomatoes, jalapeno, red onion and lime juice.
