
Breakfast Tacos

Serves: 4-6
Ingredients
- 1 medium tomato, chopped
- 1 jalapeno, chopped
- ¼ cup chopped red onion
- 1 tablespoons lime juice
- 1 tablespoon oil
- 6 eggs, beaten
- ¼ teaspoon salt
- 6 flour street tacos
- ½ cup cooked chorizo
- 1 teaspoon chopped cilantro, if desired
Directions
- Heat a large skillet and oil over medium heat.
- Add the eggs and salt and scramble to a soft set.
- Fill tacos with scrambled eggs and chorizo and top with pico, and cilantro.
For pico:
In a small bowl, combine tomatoes, jalapeno, red onion and lime juice.
